Creamy Tahini Dressing Recipe with Zucchini
Delicious creamy tahini dressing goes great over a mixed green salad, wonderful with zucchini pasta noodles, or as a dip.
What is Tahini?
Tahini is a middle eastern paste or butter made from ground sesame seeds. It has a consistency similar to cashew, almond, or a thick peanut butter.
Creamy Tahini Dressing Recipe:
Equipment Needed: a High-Speed Blender
Yield: approx 1 – 1 1/2 cups
- 1/4 cup olive oil and 1/3 cup chopped zucchini.
- 1/3 cup raw tahini (my personal choice is Artisana Tahini butter – rich and creamy)
- 5 tablespoons apple cider vinegar
- 3 tablespoons Nama shoyu, wheat-free tamari, or coconut aminos
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1-2 cloves of garlic
- Optional:1 tablespoon light miso
1. Combine all ingredients in a high-speed blender and blend until smooth and creamy.
Variations: To make a lemon tahini dressing, add 4-5 drops of lemon essential oil.
