Lemon, Vanilla, and Chocolate Protein Bar Recipes

Low Sugar Protein Bars

 

I am always trying to help my clients satisfy their sweet desires with healthier no or low sugar, but tasty treats.
When it comes to protein bars, personally I am not too impressed by what I see in the stores. Many are higher in sugar or contain ingredients that I’m not too excited about.
PLUS, the cost of these bars seem to be rising, while their size seems to be shrinking.
I decided to look around at various recipes and then came up with my own combination of ingredients, and thus far, three different flavors.

1. Chocolate, Low Sugar Protein Bar Recipe

Equipment Needed: None
Yields: 6 bars
Ingredients:
  • 1/2 cup hemp seeds
  • 1/2 cup sprouted and dehydrated buckwheat grouts (or soak and sprout and use without dehydrating). Dehydrating them gives a nice crunch to the protein bar. If you don’t have these, increase hemp seeds, or replace with organic puffed rice.
  • 1/2 cup raw cacao powder or half and half, raw cacao and carob powder!
  • 1/4 cup coconut butter
  • 1/4 cup cacao butter
  • 1/4 cup coconut oil
  • 1/2 cup shredded coconut
  • 1/4 chopped nuts (combination of pecan, walnut, cashew, or personal choice)
  • 1 teaspoon maca powder
  • 2 tablespoons monk fruit (or stevia is another zero sugar sweetener that can be used if desired: 12-18 drops or 1/2 teaspoon stevia powder) OR, what I prefer, is 1/3 cup date paste.
  • Pinch of Himalayan salt
  • Optional, but I like to add them: organic raisins, about a 1/4 cup
  • Optional: a few goji berries, chopped into small pieces

2. Vanilla, Low Sugar Protein Bar Recipe

Ingredients:
  • 1/2 cup hemp seeds
  • 1/2 cup sprouted and dehydrated buckwheat grouts. If you don’t have these, increase hemp seeds, or organic puffed rice.
  • 1/2 cup protein powder 
  • 1/2 cup shredded coconut
  • 1/4 cup coconut butter
  • 1/4 cup cacao butter
  • 1/4 cup coconut oil
  • 1/4 chopped nuts (combination of pecan, walnut, cashew, almond)
  • 1 teaspoon maca powder
  • 2 tablespoons monk fruit (or stevia is another zero sugar sweetener that can be used if desired: 12-18 drops or 1/2 teaspoon stevia powder) OR, what I prefer, is 1/3 cup date paste.
  • Pinch of Himalayan salt
  • Optional: a few goji berries, chopped into small pieces

3. Lemon, Low Sugar Protein Bar Recipe

Ingredients:
  • 1/2 cup hemp seeds
  • 1/2 cup sprouted and dehydrated buckwheat grouts. If you don’t have these, increase hemp seeds, or replace with organic puffed rice.
    1/2 cup almond flour (or zero or low sugar protein powder)
  • 1/2 cup shredded coconut
  • 1/4 cup coconut butter
  • 1/4 cup cacao butter
  • 1/4 cup coconut oil
  • 1/4 chopped nuts (combination of pecan, walnut, cashew, almond)
  • 1 teaspoon maca powder
  • 10-12 drops of essential oil of lemon
  • Lemon zest
  • 2 tablespoons monk fruit (or stevia is another zero sugar sweetener that can be used if desired: 12-18 drops or 1/2 teaspoon stevia powder) OR, what I prefer, is 1/3 cup date paste.
  • Pinch of Himalayan salt
Preparation Steps:
  1. Using low heat, warm cacao butter and coconut butter so that it is in a liquid state and not hard. Using a chef knife, shave the cacao butter into shavings or small pieces so that it melts down faster on low heat. I personally put the cacao shavings and coconut butter in metal measuring cups and warm over stove top.

2. While the butters are warming, chop nuts into small diced pieces

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

3. Place and combine all ingredients into glass bowl and mix well.
4. Pour ingredients onto plate … using a spatula form into bars and put in freezer for an hour. (Personally, because we have a side by side freezer/fridge, I divide mixture onto 2 small plates, form bars, and freeze.

 

 

 

 

 

 

 

 

 

 

 

 

5. Remover from freezer and store in glass container in refrigerator.
